I Have An Illness.

It has

1 1/3 cups flour

1/3 tsp salt

whisk those together then add

1/2 cup of cold butter in small chunks

beat together until mealy then slowly add


and then let it blend until it cleans the sides of the bowl.

then flour your surface and roll it out 2” bigger than your pie pan

That’s not an illness you say? It’s a recipe for pie crust? Well if you have the illness, you roll it out thin any shape you want, slice it all over, transfer it to a cookie sheet, pop it in the oven at 350 for 15 minutes, pull it out, sprinkle generously with sugar and EAT THE WHOLE PLATE with your husband watching The Soup. The illness part comes when you do this almost every single day for a month!

Yeah, they are pie crust cookies, my mom used to make them from the left over dough when she was making A PIE. You know, actual dessert? Not just so we could eat a plate of flour and butter and sugar. And I can’t tell you why but we have made them TEN times in the last thirty days. I know, I shouldn’t be telling you this, I should be calling the doctor to schedule my triple bypass. 

They are SO GOOD. They are so plain! They are so flaky and salty and sweet! I mean, I have always told people my mom makes the best pie crust on earth, but I think I officially make the best pie crust cookie. 

And definitely the most.

wow, you've been making these for...pretty much your whole life! yours were always better than mine, which i haven't made in a thousand years. wish i was in your kitchen right now! love you~

Sounds like something similar to Taco Time's Crustos....
